Squash (Zucchini) Casserole
1    lb ground beef
1    med onion (1 cp) chpd
1    16-oz can (2 cps) tomatoes
3/4  cp water
1    envelope spaghetti sauce mix, or leftover sauce
1    t salt 
1    cp rice
24   oz succhinis (4 cps)

Cook ground beef and onion til meat is browned and onion is tender.
Mix in undrained tomates, water, sauce mix, and salt; boil.
Stir in rice and zucchini.  Cover and simmer 15-20 min
