Texas Gunpowder Stew

1	recipe Chipotle Sauce
2-3	lbs beef sirloin, trimmed, cut to 1” cubes

1	14 oz can chopped tomatoes or 5 fresh chopped
2	medium onions, chopped
2	T minced garlic
2 ½	T minced fresh parsley
1/2 	bay leaf
1 ½	t ground cumin
¼	cp lime juice, freshly squeezed
Pinch of cinnamon

2	cps cooked pinto beans
6-8	cps basic beef stock

3	T dried green jalapeno powder or cayenne pepper 
2	T cider vinegar
Chopped fresh cilantro for garnish

1.	Brown beef, add onions, garlice, parsley and sauté before adding tomatoes.
2.	Add remaining ingredients, except for dried jalapeno powder and vinegar, and cook for 1/12- 2 hours.
Add more water or beef stock if needed. 
3.	Before serving, add powder and vinegar, cilantro as garnish.
