Pickling Spices

Note: One commercial brand uses the following whole spices. This cook used the second combination of whole spices for our piccalilli and prefer it.

1. Commercial

Mustard
Coriander
Allspice
Cloves
Ginger
Bay leaves
Cinnamon
Chiles
Black pepper

2. Planter's combo

Mustard
Celery
Cloves or allspice (combines flavors of cloves, cinnamon, nutmeg and juniper berries, according to Joy of Cooking Cookbook)
Black Pepper
Chile Pepper flakes
Bay leaves
