 Corn Chowder

Source: Peter Christian's Recipes, New London, NH

Note:  Another Peter Christian's recipe, called Pennsylvania Dutch Chicken Chowder, is similar, but adds a cup of cooked diced chicken and 1/2 cup smoked sausage or Lebanon bologna.

(1) In a soup kettle melt
3 T butter

(2) Dice and saute for 10 minutes
1 med onion
1 celery stalk
2 potatoes

(3) Add
1 cp water (Planter used chicken broth)

(4) Simmer till vegetables are tender

(5) Stir in
2 1-lb cans creamed corn
2 1/2 cp milk
1 cp light cream

(6) Season with
1 t basil
1 T parsley
1/4 t pepper
1 t onion salt
1 t celery salt

(7) Continue to simmer for 20 minutes
