Gyros

Note:  This is a recipe that invites your imagination.  However you choose to make a gyro -- with chicken, lamb and beef, or vegetarian -- a yogurt-based sauce is essential.  Chicken can be cubed, then baked, sautéed, or grilled, and tossed with some dill and oregano.  Lamb and beef could be cooked using your favorite recipe, then cubed or shredded.  Some recipes call for ground lamb and beef patties. 

Oregano, crushed garlic, yogurt, and lemon juice seem to be common ingredients, and, of course, warmed pita bread.   The sandwiches are generally topped with onion rings.    One recipe from Master Cook, an old database program, uses ouzo. 

Epicurious's online vegetarian version calls for cucumbers, sun-dried tomatoes packed in oil, and fresh mint, tossed with oil and vinegar, baby spinach, and Feta cheese.  

This cook's favorite is cubed or shredded lamb with Feta cheese, shredded spinach and drizzled with a little olive oil, vinegar, and topped with a dollop of plain yogurt.
