Lentil-Feta Salads
1. Basic

Inspired by MSO and epicurious.com

Cook lentils @ 20 minutes with some onions, hot and bell peppers.  I used a full pound, but you can use
less and cover with about 4" of water.  They get mushy quickly so watch them closely.

Add balsamic vinegar and olive oil to taste, 1 garlic clove, 2 t Dijon mustard.

Add @ 2-4 oz. feta cheese, coarsely crumbled.


2.  Use the same recipe but add Roasted vegetables.


3.  Mediterranean Lentils

1-	 12-oz jar marinated artichokes
1 	cp thinly sliced cucumbers
