Cranberry Orange Salad

Note: Nice substitute for cranberry sauce, a light dessert for Turkey Day, or an accompaniment to Sweet Potato/Squash Praline.   Or, fill the ring with:  5 cps. turkey salad (diced turkey, diced celery,   mayonnaise, and lemon juice) and serve on a bed of lettuce.

2 Oranges, with 1 T rind set aside
1 1/2 cp (16-oz can) jellied cranberry sauce
1 pkg (6 oz) strawberry jello
1 1/2 c boiling water
1/4 t salt
2/3 cp nuts, chopped

Grate 1 T rind from orange. Section and dice oranges.
Dissolve gelatin and salt in boiling water.
Stir cranberry sauce till smooth; blend into gelatin w/orange rind.
Chill until slightly thickened.
Fold in diced orange and nuts.
Pour into 5 cp. ring mold and refrigerate till firm.
