Carolina Coleslaw
Note: A combination of recipes from the National Pork Producers Council and Better Homes & Gardens New Cookbook. Red cabbage can be added at a 3:1 ratio, or Napa (Chinese) cabbage is a good substitute. This idea from Epicurious Recipe file: add some cooked black-eyed peas to mixture. Great on top of BBQ's Pork or Beef sandwiches.
Shred into large bowl:
1 large head of cabbage, cored and shredded (about 3 pounds)
1 cp pared and shredded carrots
1 chopped green bell pepper
1 chopped sweet onion.
In saucepan bring to boil:
2/3 cp vegetable oil
1 cp cider vinegar
1 t celery seed
1 t salt
1 t dry mustard
1/2 cp sugar
Tabasco sauce to taste
Stir dressing to dissolve sugar.
Let cool slightly and then pour over cabbage mixture while still warm.
Stir thoroughly, cover and refrigerate overnight. Serves 12.
