Gladys Alexander's Sweet Potato Pie
Note: This wonderful lady took the time to put this memory only recipe on paper. She is
retired civil servant who returned to work for the federal government, a grandmother, and a
role model for anyone who is fortunate enough to know her!
Bake in foil or boil:
2-3 lbs sweet potatoes
1/2 cp granulated sugar
1/2 cp brown sugar
1 stick margarine or butter
pinch of salt
1 T lemon extract
1 T freshly squeezed lemon juice
1/2 T vanilla extract
1/4 t nutmeg
1/4 t ginger or all spice or both
1/4 t cinnamon
1/2 can evaporated milk (use more if needed)
Mix potatoes with above ingredients. Pour into deep dish pie shell.
Cover edges with tin foil to keep crust from burning.
Place pie on cookie sheet that has been preheated.
Bake at 450 for about 10 minutes. Reduce temp to 350° and bake about 30 minutes more.
Remove foil from pie after baking, so crust won't stick to foil.
