Spinach Feta Pie

Source:  This recipe is so old I'm not sure of the source.  It probably comes from an old magazine article. 

Note: Incredibly easy -- and healthy!

2 lb spinach, thawed
1 cp onion, chopped
8 oz fresh mushrooms, sliced
2 T olive or cooking oil
2 T Parmesan cheese
8 oz Feta cheese, crumbled
5 eggs
1/4 cp parsley
1/4 t oregano
1/4 t basil

2 crust pie pastry

1. Cut spinach into small pieces if fresh and cook in large amt boiling water 60 minutes, or
until done. If frozen, cook and finely chop.
2. Cook mushrooms and onion in oil till tender but not brown.
3. Beat eggs, feta cheese, Parmesan cheese. Stir in spinach, oregano, basil.
4. Roll 1/2 pastry 14" x 10" rectangle & fit into 10" x 6" x 2" baking dish and spoon mixture
into crust. A 9" pie pan works fine, too.
5. Roll remaining pastry 11" x 7" rectangle and cut 4- 1 1/2" wide strips; space evenly on
top filling, trim, crimp edges.
6. Bake 375 for about 50 minutes.
