Lemon Chess Pie
Very easy, not a lot of prep time!
2 Cups sugar
1 tablespoon flour
1 tablespoon cornmeal
4 eggs, lightly beaten
1/4 cup melted butter or margarine
1 teaspoon grated lemon peel
1/4 cup fresh squeezed lemon juice
1/2 tsp. salt
9-inch unbaked pie shell
1. Combine sugar, flour and cornmeal in a bowl and toss lightly.
2. Beat eggs lightly, then add remaining ingredients in the
3, Pour the mixture into the unbaked pie shell. Bake at 375 degrees for 15 minutes.
Lower the temperature to 300 degrees and bake about 45 minutes longer, till set in the
center and golden on top. For a toasty brown effect, run it under the broiler for the
"briefest" minute, and don't take your eyes off it.
