Scalloped Potatoes with Ham

Note: Traditional scalloped potatoes recipes use too many potatoes and too little cheese to pass the
hubby taste test, so I have adjusted the measurements, but potato fans can use up to 6 potatoes.

1/2 cp onion, chopped 
1 clove garlic, minced
3-6 T margarine or butter
2-3 T flour
pepper and salt to taste
pinch of dry mustard and paprika
2 cps milk or cream (or a blend of both)
3 med potatoes, very thinly sliced
2 cps diced ham
1 1/2 cp of white cheddar cheese or Gruyere if preferred, grated 

1. Grease a large casserole dish and set aside.
2. Prepare other ingredients and set aside
3. Saute onions and garlic in butter till tender but not brown. Stir in flour, pepper, and
salt.
4. Add enough milk/cream mixture to get desired thickness.
5. Remove from heat and add cheese. Stir till well blended.
6. Layer one half potatoes and ham; cover with half the sauce.
7. Add rest of potatoes and ham; cover with remaining sauce.
8. Bake covered at 350 for about 30 minutes. Uncover, bake another 25 minutes, or till
potatoes are tender. 
9. Add bread crumbs and top with paprika, mustard and dot with butter.
10. Bake another 3-5 minutes.
