Swiss Steak

Note: Add more vegetables, but increase amount of liquids, too. This recipe is a great one for
the crock pot. Serve with with Garlic Mashed Potatoes

2 lb bottom round, or other steak
2 cloves garlic
Seasoned flour for coating steak
1/4 cp bacon or ham drippings
1 cp carrots, pepper, and celery, all finely chpd
1/2 cp onions, finely chpd
3/4 cp hot beef stock
1/2 cp canned tomatoes, chpd
1/4 cp red wine
1/2 t thyme, crushed

1. Cut steak into 1/2" pieces and dredge in seasoned flour. (Or, leave whole and slit edges
so they don't curl.)
2. In heavy, oven-proof pan, sear steak in bacon drippings.
3. Add vegetables and season to taste.
4. Add liquids, stir well. Cover and bake 1 1/2 hours or more.
