Beef Stout

Note:  Serve with Garlic Mashed Potatoes

1         lrg onion, thinly sliced
2         cloves garlic, minced or pressed
4         med carrots, cut into 1/4" thick slanting slices
1/2      cp parsley, finely chopped
1         dry bay leaf
1/2       cp pitted prunes
2-21/2 lbs bonesless beef chuck, trimmed and cut into 1" cubes
1/4       t pepper
3/4       cp - 1 bottle stout or dark ale

1.    In lrg pot or slow cooker, combine onion, garlic, carrots, parsley, bay leaf, and prunes.
2.    Add beef to cooker and sprinkle with pepper.
3.    Pour in stout.  Cover and cook at low setting til beef is tender (slow cooker, 8-9 hrs)
4.    About 30 min before beef is done, prepare garlic mashed potatoes.
