Justin Wilson says, "Hush puppy is an old Southern term that originated after the
Civil War. People didn't have enough for themselves to eat let alone feed their dogs, so
when the old
hounds started barking from hunger, they would throw pieces of fried corn bread to them, yelling, 'Shut up, dog! Hush puppy!"
This recipe is another amalgam of several. It is more than enough for two people (about 14-18). Double the recipe to serve more people. Paul Prudhomme adds some thyme and oregano, uses fresh minced garlic, and chills his mixture for an hour before cooking.
1/2 c Green onion, finely chopped
1/2 c Buttermilk
1 T Bacon drippings, hot
1 egg, beaten
1 c Cornmeal
1-2 t Ground cayenne pepper
1/4 t Soda
1/4 c Plain flour
1 T Parsley, finely chopped
3/4 t Baking powder
1/4 t Garlic powder (to taste)
1/2 t Salt
Deep fat for frying
1. Combine all dry ingredients.
2. Add eggs, buttermilk, onions, and oil or bacon drippings. Mix well.
3. Drop in deep hot fat by spoonfuls and brown on all sides.
